Vineyard Work
In the process of living soils, plant cover on the inter-row rolled in the spring. Spraying biodynamic preparations. The Cavaillon is worked superficially to control competition with the vine. Disbudding, light trimming. Manual harvest.
Winemaking
Pneumatic press, no settling. Three-week fermentation with temperature regulation. Light sulphite at the end of fermentation (3g/hL).

Wine Ageing
Aged for 14 months on lees, in glass concrete vats. Batonnage in November and December.
Wine Preparation
No fining, only tasting. Sulfites readjustment (2 g/hL).
Nitrogen inerting on November 10, 2022, root day. Slight filtration on earth.
Operating Temperature
10-12°C. The wine can be aerated when opened a few minutes before tasting.
Tasting Advices
This cuvée is characterized by its tension and its delicacy on a sustained mineral frame. The saline and long finish perfectly accompanies the most daring food and wine pairings. A ceviche of scallops with sesame, a sea bass with white butter or a platter of very fresh langoustines.
