Vintage Description
Cyrus is the ingenious hero of Jules Verne's The Mysterious Island. In its own image, this cuvée is an adventure. An innovative and committed agronomic approach (BRF, plant cover, manual biange), manual harvesting, our grapes arrive at the cellar in perfect condition. The vinification is done without settling, in native yeasts and in sandstone jars.

Vineyard Work
Late pruning and according to the lunar calendar. Plant cover in the inter-row: Rye and crimson clover. The Cavaillon is worked superficially to control competition with the vine. Disbudding, light trimming. Manual harvest.
Winemaking
Pneumatic press, no settling. Inoculation with indigenous yeasts from an active yeast starter harvested 7 days earlier. Fermentation in jar for 15 days. Light sulphiting at the end of fermentation (2 g/hL).

Wine Ageing
Aged on the lees for six months. Light consumes from the jar. Very moderate micro-oxygenation via Limoges sandstone fired at high temperature
Wine Preparation
No fining, only tasting.
Nitrogen inerting on February 9, 2022, waning moon, root day. No filtration.
Operating Temperature
10-12°C. The wine can be aerated or even decanted when opened a few minutes before tasting.
Tasting Advices
A free expression of the Melon de Bourgogne, to be enjoyed for pleasure and discovery. Its saline and thirst-quenching character is revealed in dishes inspired by seafood. A wine for sharing.
