Vineyard Work
Following a living soils approach, cover crops are rolled in spring. Soil is lightly worked without inversion. Hand weeding under the rows and shoot thinning. Hand-harvested with strict grape selection.
Winemaking
Hand-harvested early in the morning. Destemmed before fermentation. Spontaneous fermentation. Maceration for 8 days.

No additives, 18 months in demi-muids (600 L oak barrels).
Wine Preparation
No added sulfur. No intervention — just time.
Bottled under inert gas, without filtration, directly from the barrel.

Tasting Advices
A unique wine to enjoy on its own for a surprising experience. Subtle oxidative and aromatic notes reminiscent of aged rum invite pairing with long-aged cheeses. It can also inspire creative sweet-and-salty food pairings that break the rules.
