"See you at the beach". It all started with this invitation. The estate team finds itself on a very special plot: sandy soil on a bed of small white pebbles, a pretty grove, an old schist wall, an atmosphere. The Beach was born! A spring cuvée, crunchy and fun.
Late pruning and according to the lunar calendar. Plant cover in the inter-row: rye and crimson clover. The Cavaillon is worked superficially to control competition with the vine. Disbudding, light trimming. Manual harvest.
Pneumatic press, no settling. Fermentation in concrete vats for 15 days with thermal regulation. Light sulphiting at the end of fermentation (3 g/hL).
Aging on the lees for six months without batonnage.
No fining, only tasting.
Nitrogen inerting on February 9, 2022, waning moon, root day. No filtration. Total SO2 45 mg/L for 19 mg/L free.
This spring cuvée is all in freshness, with beautiful citrus notes. To be enjoyed at short notice, in all simplicity, on a picnic and why not at the beach!
