Vineyard Work
In the living soil approach, we work the soil lightly without turning it over. Weeding with a hoe under the row, manual stripping. Harvested by hand with strict sorting.
Winemaking
Destemming before vatting. Spontaneous fermentation, maceration for 10 days. Malolactic fermentation at the end of AF.
